BBQ Citrus Herb Chicken
Ingredients
- 4 chicken breast fillets
- 2 lemons, zested and juiced
- 1 orange, zested and juiced
- 3 cloves of garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 3 tablespoons olive oil
- Salt and freshly ground black pepper
- Fresh parsley, chopped for garnish
Method
- In a bowl, combine lemon zest, lemon juice, orange zest, orange juice, minced garlic, chopped thyme, chopped rosemary, olive oil, salt, and pepper
- Place the chicken breast fillets in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure all fillets are well-coated. Seal or cover, and refrigerate for at least 2 hours, or overnight for more flavour.
- Preheat your BBQ grill to medium-high heat
- Remove the chicken from the marinade, letting excess drip off. Place the chicken on the grill.
- Grill the chicken for 6-8 minutes on each side or until fully cooked and the juices run clear. The internal temperature should reach 74°C (165°F).
- Let the chicken rest for a few minutes after grilling to allow juices to redistribute
- Serve the grilled chicken breasts garnished with fresh parsley. They pair beautifully with grilled vegetables, a fresh salad, or over a bed of light couscous.
