BBQ Citrus Herb Chicken



  1. In a bowl, combine lemon zest, lemon juice, orange zest, orange juice, minced garlic, chopped thyme, chopped rosemary, olive oil, salt, and pepper
  2. Place the chicken breast fillets in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure all fillets are well-coated. Seal or cover, and refrigerate for at least 2 hours, or overnight for more flavour.
  3. Preheat your BBQ grill to medium-high heat
  4. Remove the chicken from the marinade, letting excess drip off. Place the chicken on the grill.
  5. Grill the chicken for 6-8 minutes on each side or until fully cooked and the juices run clear. The internal temperature should reach 74°C (165°F).
  6. Let the chicken rest for a few minutes after grilling to allow juices to redistribute
  7. Serve the grilled chicken breasts garnished with fresh parsley. They pair beautifully with grilled vegetables, a fresh salad, or over a bed of light couscous.
