Herb-Crusted Lamb Leg Steaks with Mint Sauce
Ingredients
- 4 lamb leg steaks
- 2 tbsp olive oil
- For the herb crust:
- 2 cloves of garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme, finely chopped
- Zest of 1 lemon
- Salt and freshly ground black pepper
- For the mint sauce:
- A handful of fresh mint, finely chopped
- 1 tbsp sugar
- 3 tbsp boiling water
- 2 tbsp vinegar
Method
- Preheat your grill to a high setting. Mix the garlic, rosemary, thyme, lemon zest, salt, and pepper in a bowl. Rub this mixture over the lamb leg steaks, ensuring they are well coated.
- Heat the olive oil in a frying pan over medium-high heat. Add the lamb steaks and sear each side for about 3-4 minutes for medium-rare, or longer depending on your preference.
- For the mint sauce, dissolve the sugar in boiling water in a small bowl. Add the chopped mint and vinegar, stirring well.
- Serve the herb-crusted lamb steaks with the mint sauce on the side.
