  1. Preheat your grill to a high setting. Mix the garlic, rosemary, thyme, lemon zest, salt, and pepper in a bowl. Rub this mixture over the lamb leg steaks, ensuring they are well coated.
  2. Heat the olive oil in a frying pan over medium-high heat. Add the lamb steaks and sear each side for about 3-4 minutes for medium-rare, or longer depending on your preference.
  3. For the mint sauce, dissolve the sugar in boiling water in a small bowl. Add the chopped mint and vinegar, stirring well.
  4. Serve the herb-crusted lamb steaks with the mint sauce on the side.
