Pork & Asparagus Stir-Fry

Ingredients:
- Pork loin, thinly sliced
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 red pepper, sliced
- 1 bunch asparagus, trimmed and cut into pieces
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp fresh ginger, grated
- Salt and freshly ground black pepper
- 1 tbsp fresh thyme, chopped
Method:
- Heat the olive oil in a wok or large frying pan over medium-high heat. Add the sliced pork and cook for 2-3 minutes until lightly browned. Remove and set aside.
- In the same pan, add the garlic, red pepper, and asparagus. Stir-fry for 3-4 minutes until just tender.
- Return the pork to the pan. Add the soy sauce, honey, ginger, salt, and black pepper. Stir-fry for 1-2 minutes until everything is coated and heated through.
- Serve immediately, garnished with fresh thyme for extra flavour.
