Almond Milk and Blueberry American Pancakes
Ingredients
- 200g self-raising flour
- 1 tsp baking powder
- 2 tbsp caster sugar
- 2 large free-range eggs
- 300ml Alpro Barista Almond Milk
- 1 tsp vanilla extract
- 200g blueberries
- Butter or oil for frying
Method
- Prepare Batter: In a large bowl, mix together the self-raising flour, baking powder, and caster sugar. In another bowl, whisk the eggs, almond milk, and vanilla extract. Combine the wet and dry ingredients to form a smooth batter.
- Add Blueberries: Gently fold the blueberries into the batter.
- Cook Pancakes: Heat a little butter or oil in a non-stick frying pan. Pour small ladles of batter to form pancakes. Cook until bubbles appear, then flip and cook until golden
- Serve: Stack the pancakes and serve with a drizzle of honey or maple syrup
