Coconut Milk and Mango Pancakes
Ingredients
200g self-raising flour1 tsp baking powder
2 tbsp caster sugar
2 large free-range eggs
300ml Alpro Barista Coconut Milk with Soya
1 ripe mango, diced
Butter or oil for frying
Method
Prepare Batter: Mix flour, baking powder, and sugar in a bowl. In another bowl, whisk eggs and coconut milk. Combine to form a smooth batterCook Pancakes: Heat a little butter or oil in a pan. Pour small ladles of batter to form pancakes. Cook until bubbles form, then flip and cook until golden.
Serve with Mango: Serve pancakes topped with fresh diced mango and a drizzle of honey or syrup
