Grilled Lamb Chops with Herby Cavolo Nero

Ingredients:
- 4 lamb chops
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- Juice of ½ lemon
- Salt and freshly ground black pepper
- 200g Cavolo Nero, shredded
- 1 tbsp butter
Method:
- In a bowl, mix the olive oil, garlic, thyme, rosemary, lemon juice, salt, and black pepper. Coat the lamb chops in the marinade and leave for 15 minutes.
- Heat a griddle pan or frying pan over medium-high heat. Cook the lamb for 3-4 minutes per side, depending on thickness, until golden brown and slightly pink inside. Let rest for 5 minutes.
- Meanwhile, melt the butter in a pan over medium heat. Add the Cavolo Nero and cook for 3-4 minutes, stirring occasionally, until tender. Season with salt and pepper.
- Serve the lamb chops with the warm, herby Cavolo Nero and an extra squeeze of lemon.
