Rustic Potato Leek Soup
Ingredients:
- Maris Peer Potatoes
- Leeks
- Onions
- Vegetable stock
- Milk
- Thyme
- Salt
- Pepper
Method:
- Sauté chopped leeks and onions until softened.
- Add peeled and diced potatoes, thyme, salt, and pepper.
- Pour in vegetable stock and simmer until potatoes are tender.
- Blend the mixture, then return to the pot and stir in milk.
- Heat gently and serve.
