Simple Steamed Samphire with Lemon Butter
Ingredients
- 300g samphire, washed and tough ends trimmed
- 2 tablespoons unsalted butter
- Zest and juice of 1 lemon
- Freshly ground black pepper
Method
- Fill a pot with a small amount of water and bring to a boil. Place the samphire in a steamer basket over the boiling water, cover, and steam for about 3-4 minutes. The samphire should be bright green and tender but still crisp.
- While the samphire is steaming, melt the butter in a small saucepan over low heat. Add the lemon zest and juice, stirring to combine. Season with a little freshly ground black pepper.
- Once the samphire is steamed, remove it from the heat and drain any excess water.
- Toss the warm samphire with the lemon butter, ensuring it is evenly coated.
- Serve immediately, offering a light and refreshing side that pairs beautifully with fish, seafood, or as a vibrant addition to a vegetarian plate.
