Braised Red Cabbage

Ingredients
- 1 red cabbage, finely sliced or, pre-shredded red cabbage
- 1 large onion, thinly sliced
- 2 Pink Lady apples, peeled and grated
- 2 tbsp butter
- 3 tbsp balsamic vinegar
- 3 tbsp demerara sugar
- 1 tsp ground cinnamon
- 2 tbsp water
- Salt and black pepper to taste
Method
- Melt the butter in a large pot over a medium heat
- Add the onion and cook until soft
- Stir in the grated apples, then add the sliced red cabbage
- Sprinkle over the sugar and cinnamon and season with salt and pepper
- Pour in the balsamic vinegar and water, then mix well
- Cover the pot and lower the heat
- Cook gently for around 1 hour, stirring now and again, until the cabbage is tender
- Adjust the seasoning before serving
