Grilled Chicken and Plum Salad
Ingredients:
- Chicken breast fillets
- Fresh plums, halved and pitted
- Baby spinach leaves
- Red onion, thinly sliced
- Walnuts, roughly chopped
- Crumbled feta cheese
- Olive oil, for grilling and dressing
- Balsamic vinegar
- Honey
- Salt and pepper
Method:
- Season chicken breast fillets with salt, pepper, and olive oil. Grill over medium heat until cooked through and slightly charred. Let cool slightly and then slice.
- Grill halved plums on the cut side until they are slightly softened and have grill marks.
- On a serving platter, arrange a bed of baby spinach. Top with sliced grilled chicken, grilled plums, thinly sliced red onion, and walnuts.
- Whisk together some olive oil, balsamic vinegar, and honey to make the dressing. Drizzle this over the salad.
- Sprinkle crumbled feta cheese over the top and serve immediately.
