Warm Beetroot and Goat Cheese Salad

Ingredients:

• Red Beetroot
• Mixed greens or Baby Leaf Lettuce
• Driftwood Goat's Milk Cheese
• Walnuts
• Balsamic vinegar
• Honey
• Salt
• Pepper

Method:

1. Roast or boil beetroot until tender, then peel and slice.
2. Toss mixed greens with beetroot slices, crumbled goat cheese, and chopped walnuts.
3. Drizzle with a mixture of balsamic vinegar and honey.
4. Season with salt and pepper.
5. Serve the warm salad.
