Savoury Spinach and Feta Crepes
Ingredients
- 100g plain flour
- 2 large free-range eggs
- 300ml Alpro Barista Oat Milk
- Salt and pepper to taste
- Olive oil for frying
- 200g baby spinach
- 100g feta cheese, crumbled
- 1 garlic clove, minced
Method
- Make Crepe Batter: Whisk together flour, eggs, oat milk, and a pinch of salt and pepper to make a thin batter. Let it rest for a few minutes
- Cook Spinach: Sauté spinach and garlic in olive oil until wilted. Season with salt and pepper
- Make Crepes: Heat a little oil in a frying pan. Pour a thin layer of batter, cook until golden, then flip
- Assemble Crepes: Fill each crepe with sautéed spinach and crumbled feta, fold, and serve warm
