Beef and Roasted Sweet Potato Super Salad

Ingredients

  • 500g rump or sirloin steak, grilled and thinly sliced
  • 2 large sweet potatoes, peeled and cubed
  • 200g rocket
  • 1 red onion, thinly sliced
  • 100g blue cheese (such as Stilton), crumbled
  • 50g pine nuts, toasted
  • For the dressing: Olive oil, red wine vinegar, a bit of mustard, salt, and pepper


Method

  1. Roast Sweet Potatoes: Preheat the oven to 200°C. Toss the sweet potato cubes with olive oil, salt, and pepper, and roast until tender and slightly caramelised, about 20-25 minutes
  2. Grill Steak: Season the steak with salt and pepper, and grill to your desired doneness. Let it rest before slicing thinly
  3. Assemble Salad: In a large bowl, mix rocket, roasted sweet potatoes, red onion, crumbled blue cheese, and toasted pine nuts
  4. Add Beef: Add the sliced beef to the salad
  5. Dressing: Whisk together olive oil, red red wine vinegar, mustard, salt, and pepper and drizzle over the top of the salad. Serve up on a big platter and dig in!
