Beef and Roasted Sweet Potato Super Salad

Ingredients
- 500g rump or sirloin steak, grilled and thinly sliced
- 2 large sweet potatoes, peeled and cubed
- 200g rocket
- 1 red onion, thinly sliced
- 100g blue cheese (such as Stilton), crumbled
- 50g pine nuts, toasted
- For the dressing: Olive oil, red wine vinegar, a bit of mustard, salt, and pepper
Method
- Roast Sweet Potatoes: Preheat the oven to 200°C. Toss the sweet potato cubes with olive oil, salt, and pepper, and roast until tender and slightly caramelised, about 20-25 minutes
- Grill Steak: Season the steak with salt and pepper, and grill to your desired doneness. Let it rest before slicing thinly
- Assemble Salad: In a large bowl, mix rocket, roasted sweet potatoes, red onion, crumbled blue cheese, and toasted pine nuts
- Add Beef: Add the sliced beef to the salad
- Dressing: Whisk together olive oil, red red wine vinegar, mustard, salt, and pepper and drizzle over the top of the salad. Serve up on a big platter and dig in!
