Celery Leaf Salad
Ingredients
- Leaves from 1 bunch of celery
- 100g mixed salad leaves (baby spinach, rocket, and watercress could be a good mix)
- 1 small red onion, thinly sliced
- 1 large orange, segmented
- 50g walnuts, roughly chopped
- 50g feta cheese, crumbled
- For the dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and freshly ground black pepper to taste
Method
- Wash the celery leaves and mixed salad leaves thoroughly, then pat dry. Place them in a large salad bowl.
- Add the thinly sliced red onion and orange segments to the bowl. Scatter over the walnuts and crumbled feta cheese.
- For the dressing, whisk together the extra virgin olive oil, apple cider vinegar, honey, salt, and pepper in a small bowl until well combined.
- Drizzle the dressing over the salad just before serving and gently toss to ensure everything is evenly coated.
- Serve immediately, enjoying the fresh, vibrant flavours.
