Celery Leaf Salad


  • Leaves from 1 bunch of celery
  • 100g mixed salad leaves (baby spinach, rocket, and watercress could be a good mix)
  • 1 small red onion, thinly sliced
  • 1 large orange, segmented
  • 50g walnuts, roughly chopped
  • 50g feta cheese, crumbled
  • For the dressing:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and freshly ground black pepper to taste


  1. Wash the celery leaves and mixed salad leaves thoroughly, then pat dry. Place them in a large salad bowl.
  2. Add the thinly sliced red onion and orange segments to the bowl. Scatter over the walnuts and crumbled feta cheese.
  3. For the dressing, whisk together the extra virgin olive oil, apple cider vinegar, honey, salt, and pepper in a small bowl until well combined.
  4. Drizzle the dressing over the salad just before serving and gently toss to ensure everything is evenly coated.
  5. Serve immediately, enjoying the fresh, vibrant flavours.
