Chicken, Avocado, and Pomegranate Salad

Ingredients

• 2 chicken breast fillets, grilled and sliced
• 2 ripe avocados, diced
• 100g baby spinach leaves
• 1 pomegranate, seeds removed
• 50g walnuts, toasted and chopped
• 100g feta cheese, crumbled
• For the dressing: Olive oil, balsamic vinegar, a bit of honey, salt, and pepper

Method

1. Grill Chicken: Season the chicken breasts with salt and pepper, and grill until cooked through. Let them rest for a few minutes, then slice
2. Assemble Salad: In a large bowl, combine the baby spinach, diced avocado, pomegranate seeds, toasted walnuts, and crumbled feta cheese
3. Add Chicken: Add the sliced chicken to the salad
4. Dressing: Whisk together olive oil, balsamic vinegar, honey, salt, and pepper. Dress the salad and toss gently
5. Serve: This salad can be served as a nutritious and filling main course
