Chicken, Avocado, and Pomegranate Salad
Ingredients
- 2 chicken breast fillets, grilled and sliced
- 2 ripe avocados, diced
- 100g baby spinach leaves
- 1 pomegranate, seeds removed
- 50g walnuts, toasted and chopped
- 100g feta cheese, crumbled
- For the dressing: Olive oil, balsamic vinegar, a bit of honey, salt, and pepper
Method
- Grill Chicken: Season the chicken breasts with salt and pepper, and grill until cooked through. Let them rest for a few minutes, then slice
- Assemble Salad: In a large bowl, combine the baby spinach, diced avocado, pomegranate seeds, toasted walnuts, and crumbled feta cheese
- Add Chicken: Add the sliced chicken to the salad
- Dressing: Whisk together olive oil, balsamic vinegar, honey, salt, and pepper. Dress the salad and toss gently
- Serve: This salad can be served as a nutritious and filling main course
