Crunchy Mooli and Apple Slaw

Ingredients
- Mooli (1 medium), peeled and grated
- Pink Lady Apple, grated
- Carrot, grated
- Greek Yoghurt (150g)
- Wholegrain Mustard (1 tsp)
- Lemon, juice only
- Flat Leaf Parsley, roughly chopped
- Salt
- Black pepper
Method
- Peel and grate the mooli, apple and carrot into a large mixing bowl
- In a separate bowl, mix together the Greek yoghurt, wholegrain mustard, lemon juice, a pinch of salt and a little black pepper until smooth
- Pour the dressing over the grated vegetables and mix well until everything is evenly coated
- Fold through the chopped flat leaf parsley
- Leave the slaw to stand for 10 minutes before serving to allow the flavours to come together
- Serve chilled as a side with grilled meats, burgers or sausages
