Kale and Quinoa Superfood Salad
Ingredients
- 250g curly kale, chopped
- 200g quinoa
- 200g blueberries
- 1 avocado, diced
- 200g cherry vine tomatoes, halved
- 100g goat's cheese (such as Driftwood Cheese), crumbled
- 50g walnuts, roughly chopped
- For the dressing: Olive oil, lemon juice, salt, and pepper
Method
- Cook Quinoa: Rinse the quinoa under cold water. In a saucepan, bring quinoa and water (twice the volume of quinoa) to the boil. Reduce heat to low, cover, and simmer until quinoa is tender and the water is absorbed (about 15 minutes). Let it cool.
- Prepare Kale: In a large salad bowl, massage the kale with a little olive oil until the leaves start to soften
- Assemble Salad: Add the cooled quinoa, blueberries, avocado, cherry tomatoes, crumbled goat's cheese, and walnuts to the kale
- Dressing: Whisk together olive oil, lemon juice, salt, and pepper. Dress the salad and toss to combine.
- Serve: This salad can be served immediately or kept in the fridge for later.
