Spicy Tomato and Bean Hotpot
Ingredients
- 500g cherry tomatoes, halved
- 2 cans of mixed beans, drained and rinsed
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
- Fresh coriander for garnish
Method
- Heat olive oil in a large pot over medium heat
- Add the onion, garlic, and peppers, cooking until softened
- Stir in the smoked paprika and ground cumin, cooking for another minute until fragrant
- Add the cherry tomatoes and mixed beans, season with salt and pepper, and stir to combine
- Cover and simmer for 20-25 minutes, stirring occasionally, until thickened
- Garnish with fresh coriander before serving
