Vegan Roasted Sweet Potato and Black Bean Salad
Ingredients:
- Sweet potatoes, cubed
- Black beans, drained and rinsed
- Cherry tomatoes, halved
- Fresh coriander, chopped
- Red bell pepper, diced
- Red onion, finely chopped
- Lime, juiced
- Olive oil
- Ground cumin
- Chilli powder
- Salt and pepper
Method:
- Preheat your oven to 200°C. Toss the sweet potato cubes with olive oil, cumin, chili powder, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until tender and caramelised.
- In a large salad bowl, combine the roasted sweet potatoes, black beans, cherry tomatoes, diced bell pepper, and chopped red onion.
- Prepare the dressing by whisking together lime juice, olive oil, and a pinch of salt and pepper. Pour this over the salad.
- Toss everything together gently and sprinkle with chopped fresh coriander before serving.
