Vegan Roasted Sweet Potato and Black Bean Salad

Method:

  1. Preheat your oven to 200°C. Toss the sweet potato cubes with olive oil, cumin, chili powder, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until tender and caramelised.
  2. In a large salad bowl, combine the roasted sweet potatoes, black beans, cherry tomatoes, diced bell pepper, and chopped red onion.
  3. Prepare the dressing by whisking together lime juice, olive oil, and a pinch of salt and pepper. Pour this over the salad.
  4. Toss everything together gently and sprinkle with chopped fresh coriander before serving.
