Veggie Packed Quinoa Salad
Ingredients:
- 200g quinoa, rinsed
- 500ml vegetable stock
- 200g cherry vine tomatoes, halved
- 150g cucumber, diced
- 150g yellow bell peppers, chopped
- 75g red onion, finely chopped
- 30g fresh parsley, chopped
- 50g feta cheese, crumbled
- 60ml extra-virgin olive oil
- 30ml lemon juice
- Salt and pepper to taste
Method:
- In a saucepan, bring vegetable stock to a boil. Add quinoa, reduce heat, cover, and simmer for 15-20 minutes or until the quinoa is fluffy and the liquid is absorbed.
- In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell peppers, red onion, and fresh parsley.
- In a small bowl, whisk together extra-virgin olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the quinoa salad and toss gently to coat.
- Sprinkle crumbled feta cheese over the top and serve.
