BBQ Grilled Feta with Herb and Tomato Salsa
Ingredients
- 200g block of feta cheese
- 200g cherry tomatoes, finely chopped
- 1 small red onion, finely chopped
- 2 tablespoons fresh basil, chopped
- 2 tablespoons olive oil, plus extra for brushing
- 1 tablespoon balsamic vinegar
- Salt and freshly ground black pepper
- Fresh parsley or more basil for garnish
Method
- In a bowl, combine the finely chopped cherry tomatoes, red onion, chopped basil, olive oil, and balsamic vinegar. Season with salt and pepper to taste. Set aside to allow flavours to meld
- Preheat your BBQ grill to medium heat
- Lightly brush the block of feta cheese with olive oil. Place the feta on a piece of foil large enough to fold over and seal.
- Place the foil with feta on the grill and cover it with a lid or another piece of foil. Grill for about 10-15 minutes, checking occasionally, until the feta is soft but still holds its shape.
- Carefully remove the feta from the grill and place it on a serving dish
- Spoon the herb and tomato salsa over the warm feta
- Garnish with fresh parsley or additional basil
- Serves 4 people as a side dish
