BBQ Grilled Feta with Herb and Tomato Salsa



  1. In a bowl, combine the finely chopped cherry tomatoes, red onion, chopped basil, olive oil, and balsamic vinegar. Season with salt and pepper to taste. Set aside to allow flavours to meld
  2. Preheat your BBQ grill to medium heat
  3. Lightly brush the block of feta cheese with olive oil. Place the feta on a piece of foil large enough to fold over and seal.
  4. Place the foil with feta on the grill and cover it with a lid or another piece of foil. Grill for about 10-15 minutes, checking occasionally, until the feta is soft but still holds its shape.
  5. Carefully remove the feta from the grill and place it on a serving dish
  6. Spoon the herb and tomato salsa over the warm feta
  7. Garnish with fresh parsley or additional basil
  8. Serves 4 people as a side dish
